Method

Step 1
Dry Shake: Add Ameragave Gold, lemon juice, lime juice, agave syrup, egg white, and bitters to a cocktail shaker. Shake vigorously without ice for 15 seconds to emulsify the egg white.
Step 2
Shake Again: Add ice to the shaker and shake again until well-chilled, about 15 seconds.
Step 3
Strain: Double strain into a chilled coupe or rocks glass.
Step 4
Garnish: Optionally garnish with a cherry, lemon peel, and a few drops of bitters artfully swirled on top of the foam.
